Pollo Fiesta
Ingredients:

| 1 | Chicken breast | 1 Cup | White rice |
| 1/2 | White onion | 1/2 tsp | Chili powder |
| 1/2 | Green bell pepper | 1 tsp | Ground Ginger |
| 1/2 | Red bell pepper | 2 tbsp | Grapeseed oil |
| 1 tsp | Smoked paprika | 1/2 tbsp | Tumeric |
| 1/2 tsp | Salt | 1/4 tbsp | Black pepper |
| 2 cloves | Minced garlic | 2 Tbsp | Olive oil |
| Monterry Jack Cheese |
**All spice quantities are approximate. I typically don't measure these out, I just add them to taste. I find it works better that way. Just remember you can always add more; you can never add less.
Instructions:
1) Slice chicken into cubes and marinate in olive oil with garlic, salt, pepper, 1/2 tsp ginger and 1/2 tsp paprika.
2) Wash rice and simmer per instructions on packaging
3) Dice peppers and onions.
4) Cook chicken in a skillet for 4-6 minutes on medium heat then add peppers and onions
5) Add rice when it is finished cooking along with the rest of the spices (add spices, salt and pepper to taste)
6) Wash black beans and add to skillet until hot
7) Garnish with Monterrey Jack cheese and serve
