Chicken & Broccoli Alfredo
Ingredients
1 lb chicken breast
Grapeseed oil, olive oil, or canola oil
Steak seasoning (salt, pepper, garlic, paprika)
1 - 2 heads of broccoli
1/3 cup Heavy Cream
1/2 stick butter
1/4 cup Parmesan cheese
1 tsp Minced Garlic
Salt and Pepper to taste
1/2 lb chickpea pasta (cavatappi)
Slice chicken into bite sized pieces and marinate in oil and steak seasoning for up to 24 hours.
Wash broccoli heads and cut into bite sized pieces.
Cook chicken in a cast iron pan or nonstick on medium heat until crispy and golden brown (about 20 minutes).
Meanwhile, steam broccoli for about 15 minutes.
Boil pasta for 6 to 8 minutes
Sauce (start with about 10 minutes to go on chicken and broccoli):
Melt butter in a small saucepan on medium low heat, and add garlic when butter starts to simmer.
When garlic starts to brown, add heavy cream to sauce pan and stir regularly to reduce slightly.
Sprinkle in Parmesan cheese and stir. Add either cream or cheese as needed to achieve desired consistency.
