Simply Delicious Quesadilla

Grilled quesadilla bursting with flavors and vegetables.

Ingredients

1 Chicken breast 2 Large flour tortillas
1/2 White onion 1/2 Red bell pepper
1/2 Green bell pepper 1/2 tsp Cumin
1 tbsp Steak seasoning 2 tbsp Grapeseed oil
1 cup Grated cheese blend (3/4 cup mexican, 1/4 cup sharp cheddar)
Dipping Sauce
4 tbsp Sour cream 1 Lime

Instructions
Preparation:
1) Slice chicken into bite size pieces, toss in a bowl with grapeseed oil and steak seasoning, then let marinate for up to 24 hours in advance. Be sure to keep cold until ready to cook.
2) Dice onions and peppers by into small sizes.
3) Squeeze lime juice into serving bowl then add sour cream. Keep chilled until ready to eat. Can add lime zest for extra flavor.

Cooking Steps:
1) Sauté chicken in favorite skillet (such as a cast iron) on medium heat until golden brown, approximately 15 minutes, then set aside.
2) Sauté onions and peppers in the same pan for 10 minutes then add cumin.
3) Set the tortillas on two plates and divide the cheese, chicken, and veggies amongst them onto one half.
4) Set a large non-stick skillet on medium heat, and allow to heat up. Add 1 tbsp of butter and allow to melt and coat bottom of pan.
5) Fold one tortilla in half along toppings and place into pan; wiggling it little bit to soak up some butter on its edges. Do the same for the second tortilla and allow them to cook for a few minutes until an amber toast. For both tortillas, use tongs to flip over folded edge and wiggle to soak up rest of surrounding butter.
6) Serve with the sour cream and lime dipping sauce.
